Ingredients:
1 cup uncooked lentils
2 cups water
2 cups cauliflower florets
2 cups broccoli florets
2 cups cucumbers, sliced and quartered
1 large carrot, grated
1/2 cup chopped red onion
2 cups sliced fresh mushrooms
1/2 cup sliced olives
Directions:
Place lentils and water in a large saucepan; bring to boil. Cover,
reduce heat, and simmer 20 minutes or until tender. Drain well, and
set aside to cool slightly. Toss lentils with the remaining ingredients,
and serve.
